Did you know that Brussels Sprouts are a super powerful vegetable that is packed with nutrients that detoxify, boost the immune system and promote healthy skin! Definitely makes you want to go out and eat some, eh! But what if you don’t think you like Brussels Sprouts because of a past experience! Well this simple side dish is a must try. I was one of those people who had not given Brussels Sprouts a second chance until very recently and this side dish is delicious. It’s even good cold for leftovers at lunch the next day.
- 1 lb Brussels Sprouts
- 1 cup cooked ham, cut into small pieces
- 1 tablespoon coconut oil
- 1 leek, sliced
- 1 garlic clove, minced
- ⅔ cup chicken broth
- salt and pepper to taste
- Shred the Brussels Sprouts using a grater.
- Heat the coconut oil in a frying pan on medium heat. Add the Brussels Sprouts, ham, leeks and garlic. Cook for 5 minutes, stirring occasionally.
- Add the chicken broth and salt and pepper. Cover the pan and cook for 5 minutes.
- Serve warm.
