The Breakfast Skillet
Delicious, nutrient dense quick breakfast! I could eat this everyday!
- 1 tbsp coconut oil
- 1 cup green cabbage, diced
- ½ cup spinach, either whole leave or chopped
- ½ cup diced carrots
- ½ cup diced broccoli
- (or 1 cup broccoli slaw to save time)
- 1 mushroom, diced
- ¼ cup white onion, diced
- Heat frying pan and melt coconut oil. Add cabbage, carrots, broccoli, mushrooms and white onions. Cook until soft, approximately 6-8 minutes. Add spinach and stir until wilted. Make room in the middle of the frying pan and add your egg. Cook for 3-5 minutes. Sprinkle with salt & pepper and toss is a few splashes of your favorite hot sauce; mine is Frank's Red Hot Sauce.
